I wanted something simple but tasty and this is what I came up with. Hope you enjoy! You can also make this an easy vegetarian meal by omitting the chicken. To increase the amount of protein, you can use pasta such as Barilla Protein Plus.
1-2 cooked chicken breasts cubed (I had some in the freezer for quick use)
1 can diced tomatoes
1 can tomato sauce (small or large depending on how saucy you want it)
1/2 medium onion chopped
1-2 medium garlic cloves minced
1- 1 1/2 cups fresh spinach sliced or 1 small box of frozen spinach thawed and drained
~ 1 tsp Italian seasoning (or to taste)
~ 1/2 package of wacky mac or similar noodles cooked
Fresh Mozerella shredded or sliced to cover top ( about 1-2 cups)

Prepare noodles according to package making sure to not overcook them. While preparing noodles saute onion and garlic in sauce pan in a small amount of olive oil. Once tender add tomato sauce, diced tomatoes, and Italian Seasoning and simmer. Slice/shred spinach (hold a handful in a bunch and slice across). Grease bottom of a 9×9 baking dish. Mix noodles, chicken, spinach, and sauce and place in pan. Bake at 350 til heated through (10-20 min). Cover with cheese and continue to bake til melted.
